Hendersonville, NC has no shortage of places to grab a burger. But if you’ve sat down at Guidon Brewing Restaurant and had one of ours, you already know the difference. We’re not working with frozen patties, generic buns, or toppings straight out of a bag. Every burger on our menu starts with a hand-formed 1/3lb Midwest corn-fed beef patty, pressed fresh, cooked to order, and served on a pretzel bun that ties the whole thing together in a way a regular bun simply can’t.

Here’s a full breakdown of what we’re working with.

WHY MIDWEST CORN-FED BEEF?

It starts with the beef. Midwest corn-fed cattle produce beef that is consistently well-marbled, tender, and flavorful. The fat content is right, the texture is right, and when you hand-form it into a patty instead of pressing it through a machine, you get a burger that holds together, cooks evenly, and actually tastes like beef. It sounds simple because it is – great ingredients handled with care make all the difference.

WHY A PRETZEL BUN?

The pretzel bun is not just a gimmick. A properly baked pretzel bun has a slight chewiness and a subtle saltiness that a brioche or standard sesame bun just doesn’t have. It holds up under the weight of toppings without falling apart, it adds a layer of flavor instead of just being a vehicle for the patty, and it connects our burger menu back to our German roots in a way that feels natural and intentional. Once you’ve had a burger on a pretzel bun, going back feels like a step backwards.

THE BURGER LINEUP

The Plain Jane – $16 Don’t let the name fool you. A hand-formed Midwest corn-fed beef patty with pickles, American cheese, lettuce, tomato, and onion on a pretzel bun. This is the benchmark – the burger that everything else is measured against. Clean, classic, and done right. You can add bacon for $1 or swap to a black bean patty for $2.

Mushroom Swiss Burger – $17 This is the one for people who want something a little more elevated. Same hand-formed Midwest beef patty, smothered with fresh cut sautéed button cap mushrooms and topped with Swiss cheese on a pretzel bun. The mushrooms are cooked down until they’re soft, savory, and deeply flavorful – not just tossed on as an afterthought. This is easily one of our most ordered dishes. Customizable with the same substitution options as the Plain Jane.

Black Bean Burger – $12 A serious option for non-meat eaters – and honestly, a great option for anyone. A well-seasoned black bean patty served on a brioche bun with lettuce, tomato, onion, and pickles, with a side of our seasoned French fries. We treat this one with the same care as our beef burgers because it deserves it.

Salmon Burger – $15 Wild salmon patty on a toasted brioche bun with Swiss cheese, lettuce, tomatoes, onion, and pickles – served with a side of seasoned French fries. Light, fresh, and packed with flavor. A great option if you want something a little different from the usual pub menu.

WHAT TO ORDER WITH YOUR BURGER

Our burgers come with a side of seasoned French fries as standard, but you can substitute sweet potato fries for $1 or onion rings for $2. For the full Guidon experience, pair your burger with one of our craft beers brewed on site – a smooth lager or a cold Hefeweizen alongside a Mushroom Swiss Burger is a combination we’d put up against anything.
